Appetizers, Snacks, ...


Apple Cinnamon Dip                        Joshua & Danielle Rudder
1 med red apple- (I suggest a fairly tart apple)

1 pkg cream cheese

¼ cup sugar

¼ tsp cinnamon
Peel & core apple. Place in food processor & pulverize it (applesauce consistency). Add cream cheese & blend until it becomes whipped. Add sugar & cinnamon. Mix well. Serve with apple slices or graham cracker sticks.


Cinnamon Honey Oat Granola Bars Michael & Rachelle Kirkpatrick
2 cup rolled oats            ¾ cup packed brown sugar
½ cup wheat germ            ¾ tsp ground cinnamon
1 cup all-purpose flour            ¾ tsp salt
½ cup honey            1 egg, beaten
½ cup vegetable oil            2 tsp vanilla extract
Preheat oven to 350°. Generously grease a 9 x 13 pan. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour & salt. Make a well (like a volcano) in the center & pour in the honey, egg, oil & vanilla. Mix well using a plastic spoon (but you may also end up needing to use your hands). Pat mixture evenly into the prepared pan. Bake for 30 to 35 min, until bars begin to turn golden at the edges. Cool for 5 min. Cut into 24 bars while still warm. Do not allow the bars to cool completely before cutting or they may be too hard. Do not overcook or they will be very crunchy. I then place the bars in individual baggies & leave them on the counter for quick-grab snacks for the week. Enjoy!
Each bar is roughly 120 calories. You can add milled flax seed as well, as a substitute for some of the flour to add some healthy omega fatty acids to make it even more nutritious!

7 Layer Dip                        Marcus Mack
2 cup sour cream            lettuce, shredded
8 oz cream cheese – whipped style            black olives, sliced
1 pkg taco seasoning            shredded cheese
            tomatoes, chopped
Mix sour cream, cream cheese, and taco seasoning together and spread on bottom of baking pan (10 x 13 or larger). Layer remaining ingredients on top. Serve with tortilla chips. 

Caramel Chex Mix                        Shawna Reich
1 cup butter            2 cup brown sugar
½ cup white Karo syrup            ½ tsp vanilla
½ tsp baking soda            18 oz box Chex mix
Melt butter, sugar & syrup. Add vanilla & soda. Spray brown paper bag with spray. Pour cereal and mix into bag; shake. Microwave high for 1 min; shake. Repeat 2 more times. Spread on cookie sheet to cool.

Fritos Scoops Treats                        Gig’s & Rhonda Reich
10 ½ oz pkg corn chips, scoops            Spread corn chips in a greased
¾ cup light corn syrup            10x15x1” baking pan.
¾ cup sugar            In a saucepan, bring corn syrup &
¾ cup peanut butter, both work            sugar to a boil over med heat.
½ bag milk chocolate chips            Remove from heat. Add peanut butter
            Stir until smooth.  Drizzle over chips. Melt chocolate chips (opt 1 tsp peanut butter) on low heat or microwave.  Then drizzle over top of chips and mixture.  Cool, break into pieces.
                        Makes about 3 dozen pieces.
Pizza Snack (from Cozette Fjordbak)                        Roger & Ruth Fjordbak
1 lb hot pork sausage or regular bologna            dash Worcestershire sauce
1 lb Velveeta            dash oregano
1 Tbsp catsup            pepper to taste
dash garlic salt            Farm Bread (sm loaf), toasted
Mix spices together and spread on toast.  Freeze. 
When taken out, Bake at 400° about 10 min.
