Cinnamon Honey Oat Granola Bars Michael & Rachelle Kirkpatrick
2 cup rolled oats ¾
cup packed brown sugar
½ cup wheat germ ¾
tsp ground cinnamon
1 cup all-purpose flour ¾
tsp salt
½ cup honey 1
egg, beaten
½ cup vegetable oil 2
tsp vanilla extract
Preheat oven to 350°. Generously grease a 9 x 13 pan. In
a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour
& salt. Make a well (like a volcano) in the center & pour in the honey,
egg, oil & vanilla. Mix well using a plastic spoon (but you may also end up
needing to use your hands). Pat mixture evenly into the prepared pan. Bake for
30 to 35 min, until bars begin to turn golden at the edges. Cool for 5 min. Cut
into 24 bars while still warm. Do not allow the bars to cool completely before
cutting or they may be too hard. Do not overcook or they will be very crunchy.
I then place the bars in individual baggies & leave them on the counter for
quick-grab snacks for the week. Enjoy!
Each bar is roughly 120 calories. You can add milled flax
seed as well, as a substitute for some of the flour to add some healthy omega
fatty acids to make it even more nutritious!
